Strawberry Sprinach Salad with Avocado  
One of my favorite salads when things start warming up is the Strawberry Spinach salad which we often take to an Easter meal. I find one of the best parts is that you don't seem to need dressing because the strawberries provide it.

What You'll Need
6 cups fresh baby spinach
1 pint of strawberries, hulled and sliced
4 ounces crumbled feta cheese
1/4 cups slicced almonds
half a small red onion, thinly sliced
1 avocado, diced (you can double this)


Mix It Up

  1. Rinse your spinach in a collander. Let dry.

  2. Hull and slice your strawberries.

  3. Slice onions.

  4. Dice avocados.

  5. Toss spinach, strawberries, onions, avocados, almonds and feta.

Like I said, this doesn't seem to need dressing but if for some reason your strawberries aren't as juicy or you just feel you need dressing. A raspberry vinegrette is delicious on top.

Oh and I found the picture online because no matter what I did the picture did not look good. It looked less that appealing and in that case, I turn to the net because a picture is worth a thousand words.

With the weather turning cooler, I've started craving soup and slow cooked casseroles, but this salad looks scrumptious.

Well we'll always be opposite but I'm going to have a good slow cooker recipe in a couple weeks.

That is rather an interesting combination. I love all three incredients but have never tried them all together in one salad.

I love this salad. It is one of my all time favorite salads as the weather starts to warm up. We tend to have it a lot at Easter time but whenever the mood strikes me I make it.

You can't have the feta but there might be an alternative which is just as good. Still just the spinach, almonds and strawberries are magic in your mouth.

I do tend to stay away from the onion in it but that is a matter of preference.
