Tasty Tuesday: Macadamia Chocolate Caramel


I love messing around with chocolate. It is such a bad habit of mine but it can produce the most amazing results.

This idea came from Costco of all places. They have this Caramel Macadamia Nut Clusters that are amazing and something I try to avoid buying because they will not last. However, after being given Macadamia nuts which were salted and therefore not as tasty to eat as I'd hoped; the decision to make our own clusters was born. The things is that we really didn't want to go to all the trouble to make the clusters. It is the taste not the final product we were after.

So the Rolo idea was born. And it worked out beautifully. I mean I knew we weren't going to get clusters but rather a caramel like substance which is really a chocolate caramel and macadamia nirvana. I suggest you try it. Well worth it.

If your macadamia nuts aren't "lightly salted" you might want to try using salted butter just to give it a bit of salt. A pinch of sea salt couldn't hurt either.

2 cups Macadamia Nuts
1 large bad of Rolos
1 tsp unsalted butter
1/4 milk

Mix It Up
Lay parchment or wax paper over a cookie sheet.

On a low heat start unwrapping all the Rolos and dropping them into a medium non-stick sauce pan. They will start the melting process as you go.

Before they have melted add butter and milk and slowly stir together as the chocolate and caramel melt together.

When your Rolos are completely melted, dump macadamia nuts into the pan, turn off burner and stir until nuts are completely covered in chocolate.

Pour chocolate caramel nut mixture on wax or parchment papered tray and spread as much as possible.

Put into freezer for about 15 minutes to set.

Cut into pieces and enjoy.

Store in refrigerator to prevent melting.
