Lemon Ricotta Cookies  
What You'll Need
Cookie
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 stick unsalted butter, softened
2 cups sugar
2 eggs
3 tablespoons lemon juice
1 lemon, zested
1 (15-ounce) container whole milk ricotta cheese

Glaze
1 1/2 cups powdered sugar
3 tablespoons lemon juice
1 lemon, zested


Mix It Up
1. Preheat the oven to 375 degrees F.
2. In a medium bowl combine the flour, baking powder, and salt. Set aside.
3. In the large bowl combine the butter and the sugar. Using an electric mixer beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating until incorporated. Add the ricotta cheese (SEE NOTES), lemon juice, and lemon zest. Beat to combine. Stir in the dry ingredients.
4. Line 2 baking sheets with parchment paper. Spoon the dough (about 2 tablespoons for each cookie) onto the baking sheets. Bake for 15 minutes, until slightly golden at the edges. Remove from the oven and let the cookies rest on the baking sheet for 20 minutes.
5. Combine the powdered sugar, lemon juice, and lemon zest in a small bowl and stir until smooth. Spoon about 1/2-teaspoon onto each cookie and use the back of the spoon to gently spread. Let the glaze harden for about 2 hours. Pack the cookies into a decorative container.

This is by far one of the best cookie recipes I've ever encountered. I like lemon to an extent and I seriously thought I'd dislike these cookies but now I crave them! I'm thinking they need to be heart shaped.

SO yummy! They are good without lemon too, either plain or dusted with powdered sugar. =)

I have a similar recipe I've been using for years; some of the amounts are different and it doesn't have the lemon and they don't have to sit for 20 mins.

Would you believe the original recipe only called for 1/4 cup of ricotta? Yeah, I thought "what's the point?" and gradually worked it up to the 15oz. LOL

And a note from experience:- do not double in the same batch/bowl, results are not the same.

I love the lemon though.... so yummy.

These look and sound yummy and I think I actually have some ricotta cheese that needs to be used up, so bookmarking this!

I'm usually of the mind that if the dessert doesn't involve chocolate it can't be good (this is from experience trying things) but these are one of my favorite cookies. LOVE them and now have to make them.
