Peanut Butter Rice Krispie Cookies

Really popular recipe. I think my mom found in on a Rice Krispie's box when we were kids but very few people make it this way and it is always popular. In elementary school, all my teachers would nomiate my mom to bring these to class parties or school functions because they are so delicious and those teachers wanted them.

What You'll Need:
6 cups Rice Krispies
1 lb (16oz) M&M's whatever color you like (seasonally they are fun)
1/4 cup butter
1/3 cup crunchy peanut butter
1 large bag of mini marshmallows (sometimes more)

  1. Line a 13x9 cake pan with foil or parchment (You may need more than one.) This makes it easy to remove the cookies for cutting.

  2. It a very large bowl, mix Rice Krispies and M&Ms together.

  3. Melt butter in a non-stick or double boiler pan. (Cook on high for a double boiler and on medium for a non-stick pan.)

  4. Add peanut butter and as many marshmallows as possible.

  5. Keep adding marshmallows until all are melted and mixture is smooth.

  6. Remove from heat and pour over M&M Rice Krispie mix.

  7. Stir together with large spoons or hands until all is coated with marshmallow mix.

  8. Press into pan. Lay foil or parchment on top and press with something flat.

  9. Refrigerate overnight.

  10. Once set, remove from pan and cut into cookies of any size.

The way my mom always pressed them into a pan was to add the finished product to the pan and then put foil over the cookies. She'd them put the pan on the floor and lay a bread board inside the pan and press down to flatten the mixture out as best as possible. Works really well and to this day this is how I make them.
