Crustless Ham Quiche and Variations  
This is the original recipe that I started with for Quiche. The first time we made it as a Ham Quiche but this last time we changed it up.

1 cup diced ham
1 cup grated cheese (swiss or cheddar)
1/3 cup minced onion
4 eggs
2 cups whipping cream or half and half
3/4 tsp. salt
1/4 tsp sugar
1/8 tsp cayenne
Parsley Flakes

Sprinkle ham, cheese , onion in 9 x 9 dish.

Beat eggs slightly, beat in remaining ingredients except parsley. Pour cream mixture over ingredients in dish. Sprinkle parley flakes over top.

Back at 425 fir 15 minutes. Reduce oven temperature to 300 and bake 30 minutes longer, or until knife inserted 1" from edge comes out clean.

Let stand 10 minutes before cutting. Serves approx. 6

With Crust
You want to line the pie pan or dish with the crust before putting ham, cheese and onion in the dish.

The first time we made this we added chopped tomato and changed out the onion for green onion.

My favorite is no ham but instead bacon, cheese, onion, tomato, spinach and fresh parsley. Mushrooms would probably be good too but I couldn't convince my sister.

We made doubled this because my brother came over to eat and then we saved the rest so we would have quick easy breakfasts for a little while.

I'm not a quiche fan myself, but my housemate/best friend loves quiche. Will pass this recipe on to her :)

FYI, I know you asked me to share some of my favourite recipes with you. I haven't forgotten, just with everything that has happened over the past few months...Just haven't had time to go through and select some, but I will soon!

I didn't think I was either until I started adding my own ingredients. I loved the last one we made with the spinach but to each their own.

I know you've had a lot on your plate so you haven't had the time or the desire to post about food. It's okay.
