Taco Pie with Avocado  

Taco Pie with Avocado

Servings: 6 to 8 servings

 

Ingredients:

1 to 2 avocados, peeled and sliced

1 pound ground beef

½ cup chopped onion

1 envelop (1 ¼ oz.) taco seasoning mix

1 can (4 oz.) chopped green chilies, drained

1 cup shredded Monterey Jack or Cheddar cheese (4 oz.)

1 ¼ cups milk

3 eggs

¼ cup Bisquick Original

Sour cream, avocado slices, ripe olive slices and shredded cheese, if desired

 

Directions:

1. Heat over to 400°.

2. Grease pie plate, 10 x 1 ½ inches. Arrange avocado slices in pie plate.

3. Cook ground beef and onion in 10 inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix. Spoon into pie plate; sprinkle with chilies and cheese.

4. Beat milk, eggs and baking mix in blender on high speed about 15 seconds, or with wire whisk or hand beater about 1 minute, until smooth. Pour into plate.

5. Bake 30 to 35 minutes or until knife inserts in center comes out clean. Cool 5 minutes.

6. Garnish with sour cream, avocado, slices, ripe olive slices, and shredded cheese.

 

Variations:

I left the green chilies out and put diced olives instead.

I also added salsa as a Garnish.
