Tortilla Soup  
Tortilla Soup

 
1 large chopped onion
1 tablespoon oil
2 or 3 cups chopped cooked chicken
1 10oz can diced tomatoes
1 10oz can green chilies
2 15oz cans pinto beans,, drained and rinsed
1 13.25oz can cream-style corn
1 14.5oz can chicken broth
1/2 tsp pepper
1 tbsp chili powder
1 tsp sugar
1/2 tsp salt

1. In a 4 qt. stockpot, saute onion in oil until softened.
2.  Add the chicken, tomatoes, chilies, beans, corn, chicken broth, pepper, sugar and salt.
3. Heat to boiling and simmer for 15 minutes.
4. Garnished as desired. (My favorites are chips, sour cream and avocado.)

Garnish Ingredients:
Tortilla chips, crushed
Fresh cilantro
Dollup of sour cream
Chopped avocado
Chopped tomato

Note: Costco's canned chicken also works well as a quick and easy replacement to cooked chicken.

Makes 10 cups
