Actually my issue is with ImageReady. I can't get my animated icon to save as a gif and we know a jpg won't remain animated. What do I do?

Okay I'm using PhotoShop CS2 which I think is version 9....
Okay I know how to change the something specific to a color on a black and white photo... but how do I turn a color photo into a black and white so I can go back and change something specific to color???

Does anyone know how to change just the eyes of a picture? I want the pic to be black and white but I want the eyes to be blue.
